Margaritas Modernas and more: Puesto Los Olivos
Cinco de Mayo is a great reason to head to festive Puesto at Los Olivos Marketplace.
Try the clarified margaritas by head of spirits Beau du Bois. Clarifying a cocktail, also known as milk-washing, removes cloudiness, lessens astringency and results in a more refined drink.
Du Bois’ smooth-as-silk and elegantly presented Clarified Guava incorporates reposado tequila and canela. His Peach & Habanero uses Levantó blanco tequila – du Bois is lead consultant for the Mexican distillery – and clarified tomatillo. The Raspberry & Bergamot is technique-driven, too.
The margarita favorites remain, notably the Puesto Perfect with reposado tequila, as well as the Cadillac with Grand Marnier sidecar. There’s a library of 60 tequilas; make one a margarita for $3 or a Cadillac for $5.
New creative chef Raul Casillas offers further reason to visit. He brings Michelin-kitchen experience to a menu renowned for Mexico City-style tacos on blue-corn tortillas with crispy melted cheese. Casillas introduces a ceviche Zarandeado with bluefin tuna and serrano; a crudo verde with Ensenada kampachi and Mexican pepperleaf; an asparagus taco on a hoja santa tortilla; a rib-eye taco with a distinctive ash salsa; and a not-to-be-missed corn flan topped with popcorn.
